About the Role
Accor is seeking an experienced and skilled Chef de Partie to join its culinary team. The successful candidate will take responsibility for a designated kitchen section and ensure that food is prepared and presented according to established menu specifications and quality requirements.
The role involves maintaining efficient kitchen operations, supporting other members of the culinary team and ensuring that high standards of food safety, hygiene and cleanliness are consistently maintained.
Key Responsibilities
Take charge of an assigned kitchen section, such as sauces, grill or another designated station.
Prepare, cook and present dishes in line with menu requirements and established quality standards.
Support menu development and contribute to the creation and improvement of recipes.
Ensure all food preparation activities within the assigned station comply with food safety and hygiene requirements.
Guide, supervise and train junior members of the kitchen team working within the section.
Coordinate with other chefs to ensure efficient kitchen operations and timely delivery of food.
Monitor stock levels and ensure required ingredients and supplies are available for the station.
Place orders for necessary supplies when stock levels require replenishment.
Assist the Sous Chef with daily kitchen activities and operational duties when required.
Participate in menu tasting sessions and contribute ideas for new dishes and culinary improvements.
Keep the assigned work area, kitchen equipment and utensils clean, organised and ready for use.
Qualifications and Requirements
Hold a culinary diploma from a recognised culinary institution.
Previous experience working as a Chef de Partie in a four- or five-star hotel.
Demonstrated expertise in a specific culinary station.
Strong knowledge of food preparation methods, cooking techniques and the use of professional kitchen equipment.
Good understanding of food safety and hygiene requirements.
Possess a valid food safety certification.
Knowledge and experience in menu planning and recipe development.
Previous experience in a high-volume restaurant environment is preferred.
Knowledge of different cuisines and awareness of current culinary trends.
Strong time management skills with the ability to handle multiple responsibilities in a busy kitchen.
Good communication and teamwork abilities.
Physical stamina to remain active and work for extended periods while standing.
Flexibility to work evenings, weekends and public holidays when required.
Ability to work successfully with colleagues and guests in a multicultural environment.
